The idea behind sending different cameras was mainly to achieve a variety in 'look' once the pictures are developed. Thankfully there are still many different brands of disposable cameras around, but some are hard to find. The easiest ones are wedding cameras, but I found those quite flimsy in build quality. There are also many 'home brand' grocery store cameras, but they are usually loaded with either Fuji or Kodak film, which makes them no different than a 'normal' Fuji or Kodak camera. There are also some 'rare' models such as Rollei cameras and even infra-red ones, but they tend to be as expensive as they are rare.
After some research and quite a lot of shopping (and waiting) I came to this list. For Voyager 1 this should deliver (if all cameras find their way back home) a nice variety in 'look', from neutral to highly saturated to black and white. All cameras should be able to deliver decent pictures, with or without use of flash, and some even under water.
